We sat around the dinner table tonight and discussed possible names for this dish. Dave suggested Southwest Sweet Potatoes. Nate thought we should try for a Thai-sounding name. The other boys were too busy eating to talk much. This recipe, which I cadged from Auntie Ellen, has some unusual flavor combinations that really work!
Lime Chili Cilantro Sweet Potatoes
- 4# sweet potatoes, peeled and cut into 3/4″ pieces
- 6 T. olive oil
- 2 t. salt
- 1 t. cayenne pepper flakes
- 2 t. lime zest
- 3 T. lime juice
- 2/3 c. chopped cilantro
Coat potato pieces with 4 T. oil and 1 t. salt. Roast in single layer in baking pan for 25-30 minutes at 350° or until tender.
Stir together cayenne pepper flakes, salt, and lime zest. Whisk together lime juice and 2 T. oil. Toss both mixtures with potatoes and then stir in cilantro.
At dinner we discussed how this spicy sweet potato dish could easily become a summer sweet potato SALAD just by throwing in a handful of chopped green onions and serving at room temperature. Enjoy!
