Christmas Pie (quiche)

Oh wait, it’s not Christmas! This recipe, however, tastes good all year long. This quiche recipe came to me from Midge, a neighbor lady of my in-laws. My husband grew up playing with Midge’s son. When Dave and I got married, Midge and a whole bunch of other neighbors warmly welcomed me with some lovely recipes.

Midge’s Christmas Pie

Butter and flour a 10 inch pie plate.

  • 1/2 pound cooked bacon, crumbled
  • 1/4 c. grated onion
  • 3 c. grated cheese (can be Swiss or Cheddar)
  • 4 eggs
  • 2 c. milk
  • 1/2 c. Bisquick
  • Fresh herbs of your choice

Whirl eggs, milk, and Bisquick in a food processor or blender. Stir in bacon, cheese, and chopped herbs.

Pour into pie plate (I was advised that a Spode plate was the very best.) Bake at 350° for 50 minutes.

This pie is actually quite similar to the no-crust Ham Quiche…but like I said, it’s really a matter of finding the exact combination that your family just loves.
