I got this from a cookbook my mother-in-law gave me years ago, which I have used quite often, called The American Country Inn and Bed & Breakfast Cookbook. I confess that I LOVE pumpkin pie, and apple pie, but I’m also always willing to try something different, on the principle that I never met a pie I didn’t like. So here’s something a little Southern for y’all:
Sweet Potato Pie:
4 medium sweet potatoes, boiled until soft, peeled.
1 c. sugar
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1/2 c. butter (room temperature)
1/2 c. evaporated milk
1 unbaked 9-in. pie shell (see our Basic Pie Crust)
In a large mixing bowl, beat the sweet potatoes until they are smooth and unlumpy. Add the eggs, sugar, vanilla, salt, and nutmeg, butter and evap. milk. Beat until creamy. Pour into pie shell and bake at 350ºF until crust is brown.
