The next big food event is New Year’s Eve and, like most folks, we’re looking for excellent appetizers to take to our New Years Eve parties. Also, as usual, Michael and I have been busy experimenting wildly with pizzas. I think the experiments are the answer to the question of what party food we want to bring to our New Year’s Eve party!
I’ll start with the
The Ultimate Onion Pizza
My husband loves onions and we’ve been refining this one for a few years now. It’s very simple; here’s the current version:
Start with sourdough pizza crust. All of the recipes this week will work with regular crust too if you’d rather keep things simple. We’ll probably let our sourdough crust ripen in the fridge for a couple of days so that it’s perfect in sourness and texture.
Spread the crust onto a pizza stone. Spread red marinara pizza sauce over the crust. Top with one sauteed yellow onion and one uncooked coarsely chopped red onion. Sprinkle chopped green onions over everything. Put a layer of cheese on top of it all. (We’ve been going very thin on our cheese so as to let the flavors of the toppings really sing.)
Bake at 450 degrees for about 18 minutes or until the cheese is bubbly and browning and the bottom is starting to brown.
Cut into very small squares and serve as an appetizer.
