More yummies from the past! Wow, I LOVE it when my mom goes digging for recipes that I remember from my childhood! Here’s another one that she found:
PEANUT BUTTERSCOTCH SQUARES
- 1/2 c. butter
- 1/2 c. brown sugar
- 1 1/3 c. flour
- 2/3 c. white sugar
- 2 c. corn flakes
- 2/3 c. light corn syrup
- 1 6 oz. pkg. butterscotch chips
- 1/2 c. chunky peanut butter
Cream butter and brown sugar. Stir in flour. Press in ungreased 9 x 13 pan. Bake 15 minutes at 350 degrees.
In saucepan combine white sugar and corn syrup; heat to boiling. Add butterscotch chips and peanut butter; stir till melted. Stir in cornflakes. Spread over baked layer. Cool; cut in squares.
Considering that these babies don’t contain any chocolate, they are amazing!

Wow! with those corn flakes and peanut butter, Laura could almost serve them as ‘breakfast bars’ on the mornings her kids don’t get gingerbread.
hi! Could u use saltine crackers instead of corn flakes? That might make it a bit of a sweet/salty flavor. It would be yummy with chocolate too.
Kristen, I like the idea of saltines as an alternative to corn flakes. I think it would work too. If you try it, let me know, okay?
