Potato Chip Brownies

Here’s another recipe from my mom’s recipe files. I remember these brownies from when I was a little girl:


  • 4  1-ounce squares unsweetened chocolate
  • 1/2 cup oil
  • 4 eggs
  • 1 c. flour
  • 2 c. sugar
  • 1/2 c. crumbled potato chips
  • 1/2 t. salt
  • 1/2 t. baking powder
  • 1/2 c. walnuts, chopped
  • 1 t. vanilla

Melt chocolate and oil in upper part of double boiler, heavy saucepan, or in the microwave. Beat eggs. Add sugar and beat until smooth.. Add salt, vanilla and cooled chocolate mixture.  Mix well.  Add four and finely chopped chips and coarsely chopped nuts.  Mix lightly.  Grease and flour 8 x 8 x 2 pan (or even slightly larger size). Bake 20-30 minutes at 350 degrees until toothpick comes out clean.

Dust with powdered sugar or use boiled chocolate icing:

Chop 1 square chocolate very fine and mix with:

  • 1/2 c. butter
  • 1/3 c. milk
  • 1 c. sugar
  • and 1/4 t. salt

Boil hard 1 minute.  Beat until creamy for frosting.
