I’m always happy to find recipes that are no-egg and dairy-free recipes. This recipe happens to be an old friend too, which makes it even nicer.
Years and years ago my mom made something called Crazy Cake. Yesterday a good friend shared something that she called Goofy Cake. To my delight, Goofy Cake turns out to BE Crazy Cake. I’m tickled to have found this recipe because it IS dairy-free and egg-free. It’s good to have a recipe on hand that can feed folks who can’t have those ingredients for health reasons.
Crazy Cake aka Goofy Cake
- 3 c. flour
- 7 T. Powdered Baking Cocoa
- 2 c. sugar
- 2 T. vinegar
- 2 t. baking soda
- ½ c. plus 2 T. Oil
- 1 t. salt
- 1 t. vanilla
- 2 c. water
1. Sift together all dry ingredients in pan to be baked in (do not need to spray pan first). I use a 9×13 inch glass baking pan.
2. Make 3 wells in the dry mixture.
3. Pour vinegar in first well, salad oil in second well, and vanilla in third well.
4. Pour 2 cups cold water over everything and stir.
5. Bake 350°F for 35 minutes.
As usual, I’m always looking for variations on this that make a dish MINE… One of my friends told me that she always substitutes 2 c. of cold coffee for the 2 c. of water. That got me thinking about what else I could use instead of water. I’m going to try this with apple juice.
This is a great recipe to make when you have a dessert emergency!

This is one of my standby recipes, you know what to make when you need something fast? I can tell you that if substitue coffee for the water it has a nice rich taste too. And you have to serve it with good quality vanilla ice cream! Oh great, now I’m hungry!
Wacky cake! Yes it is amazing how well it turns out.
Sounds good, but I wonder why crazy and goofy? Piques the curiosity.
“Sweet Nelli Variation” named after my neighbor in Ecuador who LOVED this. This gives it an exotic flavor. Everyone loves it, but many feel offended to find they loved something with Carob in it!
*Use Carob powder instead of cocoa, add 2 tsp cinnamon, 1/2 tsp nutmeg, raisins, & nuts, dust with powdered sugar just before serving.
* Normal variation: add 2 tsp cinnamon, 1/2 tsp nutmeg, raisins, & nuts (I chop both in the mini food processor, we don’t like big chunks!)
* A plain cake: not as tasty but good for a pinch is this cake w/o cocoa and just add in more flour instead.
*Plain cake with orange juice instead of water, and a nice frosting like: (container of whipped cream and a can mandarin oranges with juice and a packet of vanilla pudding, dry all mixed together.)
The regular crazy cake costs PENNIES to make. So very cheap! No mixer needed can be done in a bowl with a fork. Cheap and easy, great for kids.
On a chocolate cake, a not so sweet frosting, is to drizzle sweetened condensed milk in lines on the top, and swirl them with a toothpick. Just before baking. It comes out as part of the cake. Great for eating w/0 a fork.

I actually have a better recipe, mostly the same as yours, but a few tweeks on the amounts. BUT it is ONLY better at altitude of 7500 feet. It is WAY better at that altitude. Know anyone who lives that high who needs a good simple cake?
why can’t I find any pictures to go with the recipes?
Well, some of the recipes DO have photos. If you don’t see a photo, it’s because we didn’t happen to take one of whatever food. We’re both busy moms and someday will have time to go back and make sure that every recipe has a photo. Unfortunately, that won’t happen today, this month, or this year.
I made a crazy cake like this today but with squirt instead of vinegar.I had tried it with a fruity type cake and it worked but today it crumbled to sad little pieces and burned my throat like acid! I can only think that I didn’t add enough oil and too much acid like ingredients?It looked beautifulwith a nice crakled crust but when I ate it it was horrible so it didn’t turn out that good :/
