Chocolate Chip Cookie Bars, #3

Today I have about 45 things to do in just under an hour. I don’t have time to roll out or form 1 inch balls of cookie dough for 8 different pans of cookies, so I went looking for my favorite recipe for bar cookies. During this busy season, I need SOME really quick cookies. This isn’t my very fastest cookie, but it will definitely do in a pinch.


The recipe for Chocolate Chip Cookie Bars went together in about five minutes and baked in another 35 minutes. I sliced them while they were still warm and we were out the door. Best of all, they’re really yummy.

Chocolate Chip Cookie Bars

  • 2 1/2 c. brown sugar
  • 3/4 c. melted butter
  • 2 eggs
  • 2 t. vanilla
  • 3 c. flour
  • 1 t. baking powder
  • 1/4 t. salt
  • 1 c. chocolate chips

Cream together the butter and brown sugar. Add eggs and vanilla. Mix in flour, baking powder, and salt. Stir in chocolate chips. Bake in a greased or Pam sprayed 9×13 inch cake pan (I prefer my glass Pyrex baking dish) at 350 degrees for 30-35 minutes.
