Of all the peppernut cookies that Auntie Karen makes, these are the ones I like the most. I could eat them steadily from now until Christmas.
Gumdrop peppernuts – a favorite of kids
- 1 1/2 c. brown sugar
- 1 1/2 c. sugar
- 3/4 c. lard (you can use margarine, crisco, or butter, but I find the lard or crisco work the best)
- 2 T. water
- 3 eggs
- 3/4 t. cream of tartar
- 3/4 t. baking soda
- 5 c. flour
- 1 c. cut up gum drops ( I put some flour and the gum drops in the food processor and let that do the cutting.)
- 1/2 c. nuts (optional) (I like it without)
Mix ingredients together. Roll into ropes and cool, cut and bake at 350° until they are a light brown.
