Last summer while I was rummaging through the brittle, dusty piles of 100 years of favorite recipes the family cottage, I found one of my own recipes. I had brought it up 16 years ago when I was pregnant with my second son. I remember baking these Chewy Chocolate cookies all week long because they tasted SO GOOD when not much else tasted good at all.
I subsequently lost track of this recipe and thought that it was just lost. I was delighted to discover my very own recipe card mixed in with various other tattered recipes in the kitchen cupboard. This recipe I got from Shari H. who cooked for Summit for a number of years. (I’m realizing how many of my very best recipes have come from camp cooks!)
Chewy Chocolate Cookies
Mix together:
- 1 1/4 c. butter
- 2 c. sugar
- 2 eggs
- 2 t. vanilla
- 2 c. flour
- 3/4 c. unsweetened cocoa powder
- 1 t. soda
- 1/2 t. salt
drop on a greased (or parchment-ed) cookie sheet and bake at 350° for 8-9 minutes. These cookies will spread out a bit, so don’t crowd them. It’s hard not to eat all of these cookies in one sitting.
And last, but definitely not least…these cookies are exquisite when used to sandwich mint chocolate chip ice cream. My youngest son assembled a whole tray for dessert…yummmmmmmm.

Half a teaspoon of cinnamon would really work well with this. Thanks for sharing.
