Some summer evenings are just too warm for a hot meal and today was one of those days. We eat most of our meals out on our front porch at this time of year. Tonight my goal was to create dinner out of the contents of my fridge and NOT use my oven or stove. Once I actually got going, it was pretty easy to pull together enough variety of tasty things that everyone really wanted to eat.
Here’s what ended up on our menu:
- Sourdough bread
- 4 kinds of cheeses, sliced

- asiago
- pepperjack
- extra sharp white cheddar
- mozzarella
Amazingly, everyone had great plenty to eat. It was a perfect front porch picnic.

I recently invented a new fun salad that falls under the “no cooking” summer category: a pizza salad!
(I’m sure someone else has already invented this but it was new to me…inspired by leftover pizza toppings and a bunch of lettuce waiting to be used somehow.)
Cut/tear as much lettuce as you’d like to eat.
Add your favorite pizza toppings (pepperoni, olives, mushrooms, peppers, etc.) and tomatoes.
Mix some olive oil with oregano and basil to use for the “dressing”.
Toss it all together and sprinkle some parmesan cheese on top and voila! You have a pizza salad!
Optional: Serve with breadsticks (or add croutons)
Yum! Sounds delicious. It actually sounds somewhat similar to the panzanella salad that Laura posted awhile back. I love using tried and true ingredient combinations in new ways.
I fixed a ‘refrigerator salad’ one night while we were traveling. I had peppers (red, yellow and green), tomatoes, and marinated artichoke hearts in our refrigerator. I cut those into matchstick pieces, slivered some ham and a couple of cheeses, tossed it all with the oil and vinegar dressing on the artichokes, and voila…a dinner salad. (and an emptier refrigerator)
I love doing things like this! Sometimes the best meals end up being the things that you just throw together with whatever you have lying around. It is amazing how much stuff you can find that you didn’t even realize could be made into a meal…haha! Thanks so much for sharing!
