These delicious treats started out as appetizers and ended up being dinner! I’m still using up an abundance of tomatoes and this is one of the “keeper” ideas. I particularly like combining some of my favorite foods–crab, blue cheese, and fresh tomatoes–into something new and yummy.
I started by carving out the center of four ripe tomatoes. 
Then I mixed together:
- 1/2 c. bleu crumbled cheese
- 2 T. ranch dressing
- 1 c. crab meat, chopped up finely
I stuffed the hollowed-out tomatoes with this mixture and baked them at 350° for about 25 minutes.
We sliced the tomatoes up and put them onto slices of toasted homemade sourdough bread. The flavor was big, the textures worked well together, and they made an excellent light supper. YUM!
My vegetarian friends can substitute savory breadcrumbs for the crab meat…or just pack those tomatoes full of bleu cheese!
