Nothing tastes better than soup when I’m fighting a cold or the flu. My friend Char makes an amazing soup for her family when they’re sick. I had misplaced my recipe for this soup so I emailed her and asked for it again. Char graciously wrote it out again for me. I LOVE this soup because it’s intensely flavorful, comforting, and spicy. We are all about the spicy in our house, so it works really well. The soup can, however, be toned down if your palate is a little more sensitive. This is a GREAT remedy for when you have a cold or the flu.

I don’t typically measure anything when I make this since I have been doing it for years. But here are the basics….
I save chicken bones in a gallon freezer bag. When it is full I add them to a a medium sized stock pot, cover with water about an inch above. Add 2 large bay leaves and allow to boil for about 20 minutes, then turn down to a low-simmer about another 40 minutes until the stock is reduced some.
Drain the broth from pot being careful to de-bone the broth completely.
To this broth I add about:
- 2 large carrots, sliced
- 1 very LARGE onion, diced
- 3-4+ T. fresh garlic (I use more for us), minced
- 1 large handful of fresh cilantro leaves
- 2 celery stalks, sliced
- 2-3 T. of fresh diced ginger (I use more)
- 1+ t. cayenne pepper
- 1+ t. fresh cracked pepper
- 1 heaping T. paprika
Allow this to simmer about 30-45 minutes, it will reduce more. Set aside to cool slightly. Add the whole thing to a blender and liquify it all together.
Use as a sickie broth, a soup base or a stew base. It’s VERY tasty. FULL of flavor and wholesome goodness. It helps clear your sinuses and relieve chest congestion.
You like hot and spicy so add more hot peppers like I do when I make it for my husband and myself. I can’t make it hot for the kids….they get the mild version.
