One of the very best things about cooking Thanksgiving dinner can be the MOUNTAINS of leftovers at the end of the day. Over the last five years we’ve written a LOT about Thanksgiving leftovers. Each year, we seem to come up with new ways to use the old traditional favorites, so remember that today we are looking FORWARD to using leftovers. In the days following Thanksgiving we’ll be writing about any new and creative uses we find for Thanksgiving leftovers.

Of course, the very first step in preparing for Thanksgiving Leftovers is to make sure that you don’t waste your carcass…your turkey carcass that is. Here is a discussion on what to do with your leftover turkey carcass.
