Every other Tuesday I have the privilege of spending time with a very special group of women: the Blue Ridge MOPS (Mothers of PreSchoolers). Last Tuesday we shared around our favorite recipes with each other and it only makes sense to share some of these great foods with you, my readers. Today’s recipe is from Anna, mom of 3 littles.
- 1 box Uncle Bens Wild Rice Original Recipe
- 1 can whole cranberry sauce
- 1/2 stick butter
- 1 ½ c. water
- 1 t. lemon juice
- 1 T. Dijon mustard
- 2 t. garlic, minced
- 4 chicken breasts
- ½ to ¾ c. white rice, uncooked
Melt the butter in a large skillet. Stir in the spice from the wild rice mix and then add all the rest of the ingredients EXCEPT for the two different kinds of rice and the chicken. In a baking dish (I like a deeper casserole for this type of dish), layer the rice and the chicken breasts. Pour the sauce over the rice and chicken.
Bake at 350° for 45 minutes to 1 hour. Stir halfway through to make sure the chicken is still covered with sauce.
