Crispy Peanut Butter Dream Bars

This is the first of my Prize Potluck discoveries this summer. I ate one of these tasty bars at a baby shower last weekend and knew I needed the recipe. When I learned that these homemade peanut butter rice krispy bars are gluten-free, I was determined to add this to my repertoire so that I have something a little decadent for my gf friends.

Peanut Butter Rice Krispy Bars

Crispy Peanut Butter Dream Bars

Ingredients:
Gluten-free Peanut Butter Rice Krispy Bars

  • 1/2 c. corn syrup (you can substitute agave nectar or honey for the corn syrup, upping the healthy quotient significantly)
  • 1/2 c. sugar
  • 1 c. peanut butter (creamy or crunchy…your call)
  • 3 c. crispy rice cereal (you can also use corn flakes or Special K but those DO contain gluten)
  • 1 pkg. semisweet chocolate chips

Directions:

In a heavy saucepan or double boiler to melt the corn syrup and sugar together over low heat.

Remove pan from heat and stir in peanut butter.

Fold in the cereal.

Press into a greased 9×13 inch baking dish.

Melt the chocolate chips in a double boiler or heavy saucepan. Spread the melted chocolate over the top of the bars.

Refrigerate for at least 2 hours or until everything is “set up.”

Keep these bars cool. They will become sticky and messy if you let them sit out in the sun or in a very warm room.

Like I said, I love being able to provide sweet treats for my gluten-free friends and plan to keep this recipe front and center this summer.

I’m editing this to add a word of caution from my friend, Diane. She pointed out that if we want these peanut butter bars to actually BE gluten-free, it’s important to buy crispy cereal that is marked “gluten-free.” Cereal that contains malt flavoring or any number of other mysterious  ingredients will have gluten in them. It’s also important, especially for those with celiac, to use cereal that is not produced with the same equipment as cereal containing gluten.
